Chartwells Corporate Chef Orlando Luevano, visiting from California, demonstrated healthy recipes at the Hubbell Building in Winslow Nov. 29. The Winslow Arts Council sponsored the event.

Chartwells is the food service provider for the Winslow School District. Chartwells Winslow Supervisor Robin Paul and her assistant Lorena Mora assisted Luevano.

Luevano demonstrated three healthy recipies: pan roasted brussels sprouts with carmelized onions and bacon, roasted sweet potatoes with pecans and spiced maple sauce and eating well pear crumble.

While preparing the dishes, Luevano discussed knives, butter, sauces, cook tops, correct slicing and dicing, food handling, food scrap disposal and cleanliness of food surfaces. He prepared the recipes live for the audience and then set them aside before full cooking, which would have taken too long.

Chartwells provided hot, completed dishes for each recipe, which they apportioned in sample sizes for each and every person attending. The event was free and those in attendance enjoyed watching and eating although most of the kids weren't big brussels sprouts fans.
